RAISIN APPLE LOAVES | |
1/3 cup butter, softened 2/3 cups sugar 2 eggs 3 tablespoons milk 1 teaspoon lemon juice 2 cups flour 1/4 teaspoon ea. ginger, cinnamon (optional) 1 teaspoon baking powder 1 teaspoon baking soda 1 1/2 cups peeled, grated apple 1 cup chopped raisins 1/2 cup chopped nuts Soak raisins in 1/4 cup hot water. Cream together butter, sugar and eggs until light and fluffy. Beat in milk and lemon juice. Whisk together dry ingredients and spices until well mixed. Stir into creamed mixture, mixing only until moistened. Stir in the grated apples, raisins (drained) and nuts. Grease and lightly dust with flour (tapping out excess) 3 6x3-inch loaf pans or 1 9x5-inch loaf pan. Bake at 350°F for 40-45 minutes, or until a toothpick inserted in center of loaf comes out clean.
