SCOTTISH SHORTBREAD COOKIES | |
1 lb. (4 sticks) butter, at room temp. 1 cup sugar 1 egg yolk 4 1/2 to 5 cups all-purpose flour Place room temperature butter in large mixing bowl. Add sugar and cream together. Fold in egg yolk until mixed well. Add flour, about 1 cup at a time and mix. Continue to add flour until you have a nice consistent non-sticking dough. Use your hands for best results. Work the dough well. On a floured surface roll out dough to about 1/16-inch. Using a small juice glass or round cookie cutter, make cuts. Use a spatula to place cookies on cookie sheet. Prick each cookie 3 times with a fork. Bake at 350°F for 8 to 10 minutes or until lightly to medium brown. Cool on cookie sheet. Submitted by: Jerry Pienta |
