SIMPLE SHORTBREAD COOKIE 
1 c. butter
1/2 c. sugar
2 1/2 c. flour
Jam
Sprinkles

Mix ingredients. Roll dough into balls and flatten. With spoon indent center and fill with small amount of jam or just top with sprinkles. Bake at 300 degrees for 15 minutes.

This recipe tastes great and looks really pretty with jam. I used splenda and smart balance and it still turned out great. Make sure you melt the butter if you use sticks. Cooking time: required 25 minutes at 300°F.

I LOVED this recipe! I baked it for 20 minutes and I used raspberry preserves. It is amazing! The jam is VERY hot so wait for the cookies to cool down before eating.

It's an amazing recipe. Only deal is that it a bit heavy the dough. I made my own jam this morning so I just put my jam in it. I can't figure out what the best temp is, its hard cause if it's too hot the jam will burn and the cookie would cook, if it is too low, the cookie won't cook and the jam would still cook. Its a good recipe.

Love the recipe. The cookies came out great even with a couple of glitches on the way. First, I only had lightly salted butter and used it in the recipe. Second, the dough was a bit too dry initially so I added a very small amount of buttermilk to moisten it. Made the cookies with sour cherry preserves - one cherry for one dimple. Delicious.

This is delicious. I made it with raspberry preserves. Problems I encountered however is that the dough was dry, so then I added a tablespoon of coconut milk and this moistened it up and kept it from being too sweet. Then the bake time (15 minutes) was not right. So it turned out the best time was approx 25 minutes. The cookie was done and the jam was not over cooked. Bit hit with everyone!

Looking for another way to make these dry cookies more delicious? Put down a layer of cream cheese below the jam - it helps tone down the sweetness of the other ingredients and adds a good bit of moisture.
