MATZOH APPLE KUGEL 
3 whole matzoh
3 tart apples, grated
1/2 c. sugar
1/2 tsp. salt
3 eggs, separated
1 tsp. cinnamon
5 tbsp. oil

1. Soak matzohs in cold water 5 minutes.

2. Drain, put in bowl. Mix sugar and cinnamon, add 2 tbsp. oil.

3. Beat egg yolks well, then mix in stiffly beaten egg whites.

4. Heat the remaining oil in baking dish (8 inches square).

5. Pour mixture into hot baking dish and bake for 45 minutes at 375 degrees.
