COCONUT OATMEAL COOKIES | |
2 cups sifted all-purpose flour 1 cup (2 sticks) butter 1 cup brown sugar, firmly packed 1 cup granulated sugar 1 tbsp. molasses 2 cups coconut 2 eggs 2 tsp. vanilla 2 tbsp. coconut or dark rum (optional) 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 cup rolled oats Cream together the butter, adding sugar slowly and beating until light and fluffy. Add eggs, beating well after each addition, then vanilla and rum, if using. Sift together flour, baking soda, baking powder and salt. Slowly add dry ingredients. Stir in oatmeal and coconut flakes. Drop by large teaspoonfuls onto ungreased baking sheets. Bake in a preheated 375°F oven for 12 to 15 minutes, or until golden. Remove to wire racks to cool. VARIATIONS: I never make these the same way twice - some possible additions include raisins, dried cranberries, goji berries, chocolate or peanut butter chips (any kind), peanut butter, nuts (including walnuts, pecans, almonds, macadamia nuts or sunflower seeds) and whatever is good! Some of the flour may also be substituted with almond or oat flour or bran. A spoonful of wheat germ or bran won't be noticed but will increase the nutritional value for a healthful snack!
