Easy Macaroni and Cheese

I admit that, even with the simpleness of the recipe, I did not exactly follow it. The box I bought was twenty four ounces of noodles, and I knew that I would not use it for anything else. So that it wouldn't go to waste, I tried to nudge the number accordingly. Regardless of my playing fast and loose with the recipe, I added ingredients when and how instructed and baked per the directions. It came out incredibly well.

Thanks for making it simple enough that you can make some changes and not make a disaster.

This is my grandmother's recipe from her wood stove days in the 1920s. She wasn't one to fuss with exact measurements. It's foolproof. It works with almost equal parts macaroni and cheese, the butter adjusted accordingly and milk to cover. The only problem I've ever had was the top browning too quickly...loosly tent it with foil. And NEVER NEVER NEVER stir after it's in the oven.

I tried this recipe... Added onion powder and ground mustard, but followed the main directions. It was delicious, wow what a time saver... No cooking the macaroni. I did tent it with Reynolds wrap did not want any crispy pieces. Turned out great!! This will be made often.

Followed recipe with only modification being I just added cheese that we had (4 cheese mix, emmental, and blue cheese since it calls for a sharp/strong cheese). Frankly, for the amount of time this took (less than 5 minutes), it was absolutely delicious. I'll make it again and experiment with different cheeses (my 6 & 8 yr old weren't too fond of the blue cheese). A keeper. Especially when one doesn't want to go to the store!

So easy and so delicious. I used 1 1/2 cups of half and half creamer and 2 1/2 cups skim milk. So creamy, easy and delicious. Definitely will make again and for family gatherings.

Very tasty & I will make this again with some modifications. As I always do, I followed the recipe exactly. Next time I will keep it in the oven an extra 10 or 15 minutes. The macaroni was firm & combined well with the liquid ingredients but there was water in the bottom of the baking dish. I used 2% milk but maybe whole milk combined with more time baking would have made this a 5 star dish.

Try this... with Colby Cheese... Oh! my!... So much better than Cheddar. Actually Colby is an old time cheese, so no wonder it was wonderful.
