TEX-MEX MAC AND CHEESE 
2 cups uncooked macaroni pasta noodles
1/2 cup (1 stick) butter
1/4 cup milk
1/2 cup chopped onion
pickled jalapenos (to taste)
3 strips bacon, cooked crisp
8 oz. sharp cheddar cheese, divided
bread crumbs (enough to top)
chopped parsley
chopped green onion

Cook bacon till crisp and reserve both bacon and drippings. Boil macaroni until desired doneness. Chop jalapeno and onion.

In a medium saucepan melt butter and add most of the shredded cheddar. Cook until cheese sauce is obtained.

Layer macaroni, cheese sauce, and vegetable mixture in a baking pan. Season with salt and pepper, to taste. Top with remaining cheddar cheese, bread crumbs, green onion, and jalapenos (if you like it spicy!)

Cook uncovered until cheese is melted and bread crumbs are browned...

I mixed in some Mexican "fiesta" style cheese with the cheddar. The crispy bacon really takes it over the top! Definitely making this again - maybe even as part of my next potluck contribution. Thanks so much Mike!
