COCONUT OATMEAL COOKIES 
2 cups sifted all-purpose flour
1 cup (2 sticks) butter
1 cup brown sugar, firmly packed
1 cup granulated sugar
1 tbsp. molasses
2 cups coconut
2 eggs
2 tsp. vanilla
2 tbsp. coconut or dark rum (optional)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 cup rolled oats

Cream together the butter, adding sugar slowly and beating until light and fluffy.

Add eggs, beating well after each addition, then vanilla and rum, if using.

Sift together flour, baking soda, baking powder and salt.

Slowly add dry ingredients. Stir in oatmeal and coconut flakes.

Drop by large teaspoonfuls onto ungreased baking sheets.

Bake in a preheated 375°F oven for 12 to 15 minutes, or until golden. Remove to wire racks to cool.

VARIATIONS:

I never make these the same way twice - some possible additions include raisins, dried cranberries, goji berries, chocolate or peanut butter chips (any kind), peanut butter, nuts (including walnuts, pecans, almonds, macadamia nuts or sunflower seeds) and whatever is good!

Some of the flour may also be substituted with almond or oat flour or bran. A spoonful of wheat germ or bran won't be noticed but will increase the nutritional value for a healthful snack!

Made them tonight (at 2am hahah) and they were very good! I was looking for a recipe similar to an old favourite that I lost, and this was pretty close! The batter seemed a bit soft, so I just added a bit more oatmeal, maybe about a 1/4 cup. Fantastic! =))

This cookie recipe is a winner! I like to make "cookies with a purpose" that are packed with nutrition benefits. So I altered this recipe by leaving out the rum, cutting the sugars in half (nobody ever notices), I substituted 1/2 cup of AP flour with organic coconut flour (high in fiber & protein!), used half a cup of organic butter and 1/2 cup of organic unrefined coconut oil (good source of all the omega fats), added 1 tsp. of organic cinnamon, a hint of nutmeg, a few chocolate chips and some chopped walnuts. They turned out wonderful!! No need to feel guilty about eating these cookies. They are better than any packaged treats by far! We love how chewy and moist they are! Thanks for sharing this excellent recipe!

Five stars! This recipe is a keeper. I did make a couple of changes-less sugar 1 1/2 c., less coconut 1 c., and I added 1 c. chocolate chips. Also baked 10-11 mins. Yummy!

These were GREAT oatmeal cookies -- just the right amount of chewy and crunchy. I cut the sugars in half and replaced the molasses and rum with 3 tbsp. Irish Cream liquor. I also used unsweetened large-flaked coconut. Yum! Thanks for the recipe!

The batter itself taste so good, but my cookies were very flat. Cooked them for ten minutes and took them out. Could I need more flour or something? Even on the second batch i added more oatmeal. Any tips girls?

Hi Hailey,

Check your oven temperature using an oven thermometer. If the oven temperature isn't hot enough when the cookies go in, they will spread out before they have a chance to set. Also, be sure to preheat your oven for 15 minutes before baking, and don't open the oven door for too long because it lowers the heat.

If that doesn't help, try a tablespoon or so of extra flour or coconut or substitute a little vegetable shortening for some of the butter (at the expense of the great flavor that butter provides).

These cookies are FANTASTIC! I made sandwich cookies with them and added pineapple frosting for a baby shower and I was bombarded with people wanting the recipe! Too good! I baked them for 8 minutes and rolled the dough to make perfect sandwich cookies and I didn't have molasses so I added honey. Brilliant. 5 STARS!!

I baked these today and they're just fantastic! They stay chewy and moist. They baked fast in my oven, a little too long the first time, so I left them in there for 10 minutes instead. They're absolutely delicious.
