WEST VIRGINIA CORN PONE 
4 c. cornmeal
4 c. boiling water
1 c. sugar
1 tsp. salt
1 egg
1 c. flour
2 tsp. baking powder
1 tsp. baking soda, dissolved in 1 c. buttermilk

Pour boiling water over meal, sugar and salt. Let set overnight. Add remaining ingredients. Bake at 400 degrees for 1 hour in a large iron skillet. Remove from oven and cover with lid. Let stand for 15 minutes. Turn onto dish cloth.

The recipe here might be one version of WV corn pone, but it's not the very best. It has too much water and too much flour and not enough baking powder. Plus, you have to use unsifted stoneground cornmeal and there is no need to let the water and cornmeal sit overnight - 3 to 4 hours is plenty of time. My recipe is over 100 years old and is truly authentic and absolute perfection.

I have a recipe similar to this, given to us by my cousins best friend. It includes the cornmeal, hot water, sugar, and salt. Let it sit overnight, stir as often as possible before going to bed.

Next morning: Add the flour, 2 or more eggs, 1 tbsp. melted butter, 2 tsp. baking powder, 1 tsp. baking soda, 1 cup buttermilk.

Pour into a greased tube/Bundt cake pan. Bake 15 mins @ 460°F. then reduce heat to 250°F. then bake for an hour.

Honestly, I'd rather try just straight up 400°F., its a lot easier.

I'm gonna try this! But I will make it tomorrow morning and head off to work and bake it that evening... cause I have ramps :)
