WEST VIRGINIA CORN PONE | |
4 c. cornmeal 4 c. boiling water 1 c. sugar 1 tsp. salt 1 egg 1 c. flour 2 tsp. baking powder 1 tsp. baking soda, dissolved in 1 c. buttermilk Pour boiling water over meal, sugar and salt. Let set overnight. Add remaining ingredients. Bake at 400 degrees for 1 hour in a large iron skillet. Remove from oven and cover with lid. Let stand for 15 minutes. Turn onto dish cloth. |

Next morning: Add the flour, 2 or more eggs, 1 tbsp. melted butter, 2 tsp. baking powder, 1 tsp. baking soda, 1 cup buttermilk.
Pour into a greased tube/Bundt cake pan. Bake 15 mins @ 460°F. then reduce heat to 250°F. then bake for an hour.
Honestly, I'd rather try just straight up 400°F., its a lot easier.
I'm gonna try this! But I will make it tomorrow morning and head off to work and bake it that evening... cause I have ramps :)
