MAINE CLAM CAKES 
1 pt. of shelled clams, cleaned and chopped
1 1/2 pkg. saltine crackers, crushed coarsely
1 egg
Juice of clams
Salt and pepper

Blend together all ingredients, using enough clam juice to hold everything together and make patties, like hamburgers. Fry patties in fat or hot oil until golden brown. Set on paper towel to absorb any excess fat. Sprinkle lightly with salt and pepper and serve.

This recipe makes the exact same clam cake as is sold along the Maine coast. I have been trying to figure out how to make them for some time now and now I know. I have modified the recipe to add Panko crumbs and I use all of the juice from the shucked clams and if they are too juicy I add corn flour and some potato flakes to stiffen them up. Also, let them sit for a while after mixing adds greatly to these delightful cakes. Thank for the recipe.

Thank you. I grew up eating clam cakes in Maine. Lots of fake "clam cakes" out there but these bring me back to my childhood. Easy, simple recipe. A taste of Maine I can reproduce in Arizona. My kids, and grandbabies love them.

Most places in the USA have clam cakes that are small and very thick. But Maine clam cakes are shaped like a McDonald's hamburger, same size too maybe even a bit bigger.
