CARROT PUDDING 
1/2 c. butter
2/3 c. sugar
1 1/2 c. raw carrots, grated
1 c. seeded raisins
3/4 to 1 c. flour, sifted
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. grated nutmeg
1/4 tsp. powdered cloves

Heat oven to 350 degrees. In a medium mixing bowl, blend butter and sugar. Fold in carrots and raisins. Then add flour, baking powder, salt and spices. Mix well. Pour into a greased and floured 1 quart casserole dish. Bake 40 minutes. Cool and serve. Makes 4 to 6 servings.
