GRANDMA'S CARROT PUDDING 
2 carrots, grated
1 med. potato, grated
1/2 tsp. baking soda
1/4 tsp. cinnamon
1/2 tsp. nutmeg
3 eggs
1 1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. cocoa
1 heaping tbsp. butter
1 pkg. raisins
1 c. sugar
Enough flour to stiffen

Mix together carrots and potato. Add remaining ingredients. Mix well and pour in baking dish. Bake at 325 degrees for 45-60 minutes. Serve with Lemon Sauce.

LEMON SAUCE:

1/2 c. sugar
1 tbsp. cornstarch
1 c. water
2 tbsp. butter
1/2 tsp. lemon rind
3 tbsp. lemon juice
1 pinch salt

Combine sugar, cornstarch and water in a pot and cook on high, stirring constantly until thick. Remove from heat. Add rest of ingredients. Return to heat until it's thick again, 2-3 minutes. Pour over carrot pudding while it's hot.
