LEMON SQUARES | |
2 c. flour 1 c. butter (no substitutes) 1/2 c. powdered sugar Let butter come to room temperature and blend with the flour and sugar. Press into a 9x13 inch pan and bake at 325 degrees for 20 minutes or until brown around the edges. While crust is baking, mix together the following: 4 eggs, slightly beaten 4 tbsp. fresh lemon juice 2 tbsp. grated lemon rind 4 tbsp. flour 2 tsp. baking powder 1/4 tsp. salt Pour above over baked crust and bake at 350 degrees for 25-30 minutes. Cool and sift powdered sugar over top. Cut into small squares. Makes 3 dozen. |
