POTATO SOUP WITH BACON 
1 1/4 lbs. potatoes
1 tsp. salt
1/2 tsp. caraway seeds
1 onion, diced
1 1/2 tbsp. lard or butter
2 tbsp. flour
White pepper
1 pinch of marjoram
3/4 c. smoked bacon, diced
5 fl. oz. sour cream
1/2 bunch parsley, finely chopped

Pare potatoes and cube. Boil in 2 1/2 cups salt water and caraway seeds until almost done.

Meanwhile, saute onion in lard or butter until golden yellow. Add flour, and slightly brown it, and add the water from the boiled potatoes. Season with pepper and marjoram, and bring quickly to a boil. Add potatoes. Mix well and simmer until potatoes are soft.

Dice bacon and saute well. Add bacon, including the liquid fat, to the soup. Refine with sour cream. Season to taste, and add parsley.
