BUTTERMILK CANDY 
1 tsp. baking soda
1 cup buttermilk
2 cups sugar
1/2 cup (1 stick) butter
1 tsp. vanilla
1 cup nuts

Stir baking soda into buttermilk; add to sugar and butter. Cook to hard ball stage (250-266°F on candy thermometer).

Remove from heat. Add vanilla. Add a small amount of nuts at a time, beating after each addition.

Spread into a buttered pan to cool. Cut into squares to serve.

Cooks Note: Use of a candy thermometer is recommended.

Makes 8 servings.
