MICHELLE'S CHICKEN PARMESAN 
6 large boneless skinless chicken breasts
1 box Club or light flaky crackers
2 to 3 large eggs
1 tsp. salt
1/2 tsp. pepper
1 cup vegetable oil (for frying)
1 (15 oz.) can tomato sauce
1/4 tsp. dried basil
1/2 tsp. garlic powder
1 tbsp. butter
Parmesan cheese (for sprinkling)
Mozzarella cheese (for sprinkling)

Crumb crackers using blender. If no blender place in Ziploc bag and crush, place in long container.

In separate bowl whisk eggs, salt and pepper. Heat oil in large frying pan on stove on medium heat, wait until oil starts to form bubbles. Dip chicken in egg mixture, then in bowl with crackers and coat chicken with the cracker crumbs. Place in frying pan and fry for about 10 minutes on each side.

Place in large baking casserole dish (9x13 or 13x13-inch).

Preheat oven to 350°F. While oven is heating mix tomato sauce, basil, garlic powder and butter in a small saucepan. Heat and place over each piece of chicken. Sprinkle generously with Parmesan cheese.

Bake at 350°F for 35 to 45 minutes or until chicken is cooked through. Take out of oven and place Mozzerella cheese on top. Place back in oven and cook just until cheese is melted.

This recipe usually makes enough for 6 people or family of 4 for 2 meals.
