ITALIAN SWISS STEAK 
SAUCE:

2 tbsp. butter
2 cloves garlic, crushed or 1 tsp. minced dried
1 can tomatoes, undrained
1 1/4 tsp. dried basil leaves
Dash of salt & pepper

Melt butter, saute garlic until golden. Add remaining ingredients. Bring to boiling. Reduce heat and simmer covered 10 minutes.

STEAK:

2 to 2 1/2 lbs. round steak
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper

Combine flour, salt and pepper. Pound 1/2 of mixture into each side of steak. Heat 1 tablespoon oil in skillet. Brown steak on both sides. Pour sauce over steak. Simmer, covered 2 to 2 1/2 hours or until meat is tender. Temperature: about 250 degrees on electric skillet. Sprinkle dried parsley flakes over meat and sauce last 30 minutes of cooking.
