CHICKEN SALAD EXTRAORDINAIRE 
Green leaf, red leaf and Romaine lettuce
2 lg. tomatoes, cut up
Mushrooms, sliced
Red onion rings
1 or 2 cans mandarin oranges, drained
Shredded cheese of your choice
Garlic croutons or plain croutons and garlic powder
Fresh ground pepper, lots
Cooked chicken chunks, cold or hot

Serve with Poppy Seed dressing.

POPPY SEED DRESSING:

3/4 c. sugar
2 1/2 tsp. dry mustard
2/3 c. cider vinegar
1 onion, minced in food processor
2 c. canola oil
3 to 4 tbsp. poppy seeds

Using mixer, mix first 4 ingredients well. Add oil slowly beating until mixture thickens. Add poppy seeds and mix well. Keeps in refrigerator for 1 month.

May use left over boneless chicken or broil it fresh and use hot.

Easy dinner. Serve with hot rolls.
