CHICKEN SALAD (HOT) 
2 to 3 c. cooked diced breast of chicken
8 oz. can water chestnuts, drained and sliced
4 oz. jar pimento, diced
1/3 c. sliced mushrooms
1/2 c. (each) toasted slivered almonds, shredded Cheddar cheese
2 tbsp. lemon juice
1 1/2 c. mayonnaise
Salt and pepper to taste
1 can French fried onion rings

Combine ingredients except cheese and onion rings; place in a buttered 1 1/2 quart casserole; top with cheese and onion rings; bake 20 minutes at 350 degrees. Serves 6 to 8.
