LEAN, MEAN, STUFFED GREEN PEPPERS | |
1 lb. ground turkey 1 onion, chopped 1 garlic clove, chopped 1 1/2 cups quick-cooking rice (I use Minute rice) 1/2 cup Parmesan cheese 1/2 cup Italian bread crumbs (Progresso or 4C) 2 to 4 green peppers (suitable for stuffing) 1 (24 oz.) jar spaghetti sauce, divided (your favorite) 1 cup shredded Mozzarella cheese, for sprinkling olive oil crushed red peppers flakes, to taste Preheat oven to 375°F. Core and clean seeds out of your green peppers. Brush with olive oil, inside and lightly salt the inside of the peppers, set aside. Cook ground turkey with chopped onion and garlic. Add rice, bread crumbs, Parmesan cheese, 2/3 of the spaghetti sauce and some crushed red pepper flakes (if desired) to the turkey and mix well. Stuff peppers with the mixture and place them in a glass baking dish. Pour remaining sauce over the peppers. Any remaining mixture can be placed at the base of the peppers. This will help them to stand up straight in the dish. Tent with tin foil and bake at 375°F for 40 minutes. Remove tin foil and sprinkle Mozzarella cheese over peppers, bake for another 10 minutes.
