BROCCOLI CASSEROLE 
3 c. minute rice
3 cans cream of mushroom soup or cream of chicken
1 sm. box Velveeta cheese
1 sm. box Mexican Velveeta
1 pkg. frozen broccoli
1 (4 oz.) can mushrooms
1 onion

Cook minute rice in large pan. Thaw broccoli in microwave for 3 minutes. In large casserole dish chop onion and add mushrooms and broccoli. In your rice chop cheese in small cubes and let melt. Cook slowly or it will stick. When cheese is melted add soup until it is warm. Add rice mixture in your casserole dish. Stir well. Cook in oven for 45 minutes at 375 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
