MICROWAVE CALICO CASSEROLE FOR
TWO
 
2 tsp. butter
1/2 c. corn bread mix
1 c. frozen whole kernel corn
1/2 of sm. red or green pepper, chopped
2 tbsp. onion, diced
1 tbsp. butter
2 eggs
1/4 c. milk
1/4 tsp. Worcestershire sauce
1/4 lb. cooked Polish sausage, chopped
2 oz. shredded Swiss cheese

In microwave, cook 2 teaspoons butter uncovered until melted. Toss with corn bread mix. Set aside. In 1-quart casserole, combine corn, pepper, onion and 1 teaspoon butter. Cook (uncovered) on high about 3 minutes. In 2 cup measure beat together eggs, milk and Worcestershire sauce with fork.

Stir egg mixture, sausage and cheese into corn mixture. Spoon into 2 (15 ounces) casserole. Sprinkle corn bread mix on top. Cook, uncovered, on high 6 to 7 minutes. Let stand 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
