TACO CASSEROLE 
Makes a great filling for burrito shells!

2 boxes or packets of Spanish rice
1 1/2 lb. ground beef
1 diced onion
2 packets taco seasoning mix
1 (15 oz.) can can corn
1 (15 oz.) can black beans
2 cups shredded Mexican blend cheese

OPTIONAL ADDITIONS:

dairy sour cream
salsa or tomatoes
guacamole
burrito shells or corn chips

Prepare rice according to package directions, slightly under cooking to keep moist. Spread rice in the bottom of a 13x9-inch casserole pan.

Brown ground beef and drain grease. Return beef to pan and add diced onion. Add taco seasoning and water to cook according to packet directions.

Drain corn and black bean cans and mix evenly with seasoned beef and onion. Spread meat mixture on top of rice in the casserole pan. Top with shredded cheese.

Bake at 350°F for 30 minutes.

Makes 8 to 10 servings.

Serve immediately or refrigerate to serve later. Add any taco style toppings of your choice.
