LOW CALORIE SPINACH MUSHROOM
CASSEROLE
 
2 (10 oz.) pkg. frozen chopped spinach (from Kroger's) thawed and drained
1 lb. fresh sliced mushrooms
1/8 tsp. salt, optional
1/8 tsp. garlic powder
3 tbsp. diet margarine
1/4 c. chopped onions
2 oz. (1/2 c.) low fat Mozzarella cheese

Saute mushrooms in butter. Mix spinach with onions, salt, garlic powder and liquid from sauteed mushrooms. Spray bottom of square baking dish with vegetable spray. Line bottom of dish with spinach mixture. Layer with 1/2 of cheese. Cover with mushrooms. Cover with rest of cheese. Sprinkle with paprika.

Bake in 350°F oven for 20 minutes. Serve hot.

Serves 4 to 6.
