CHICKEN SPINACH CASSEROLE 
1 1/2 c. diced chicken
2 (10 oz.) frozen chopped spinach
1 can cream of mushroom soup
1 can chicken broth
1/2 c. grated cheese
1/2 c. sour cream
1 egg, well beaten

Mix soup, broth, sour cream, and egg and 1/2 of cheese. Mix with chicken and spinach. Sprinkle remaining cheese on top. Bake at 350 degrees for 20-25 minutes.

I added every bit of chicken I could pick from a 2 lb. (32 oz.) rotisserie chicken from the store (did this the day before and cubed it). I also added an extra 1/2 cup of cheese. Very good.
