SQUASH CASSEROLE 
6 medium yellow squash (about 5 c.)
Dash of salt
30 Ritz crackers
1 medium onion, diced
1 tbsp. sugar
2-3 oz. pkgs. cream cheese
4 tbsp. butter, melted

Cook squash and onion in a pan with a small amount of water until tender. Drain well; add salt. Place in mixing bowl and add sugar and cream cheese. Beat with mixer until smooth. Melt butter and butter casserole dish. Pour mixture in casserole. Crush crackers into crumbs; toss with melted butter and spread over squash mixture. Bake at 350 degrees for about 25 minutes.
