GRILLED VEGETABLE SKEWERS | |
1 yellow bell pepper, cut into 1-inch pieces 1 red bell pepper, cut into 1-inch pieces 1 onion, cut into 1-inch pieces 1 zucchini, cut into 1-inch slices 1 yellow squash, cut into 1-inch slices 1 cup cherry tomatoes, halved 1 tsp. olive oil 1/2 tsp. paprika 1/2 tsp. garlic powder salt and pepper, to taste Preheat grill to medium-high heat. Thread the bell peppers, onion, zucchini, squash, and cherry tomatoes onto skewers, leaving a little space between each piece to allow for even cooking. Brush the vegetables with olive oil and sprinkle with paprika, garlic powder, salt, and pepper. Gently turn the skewers to ensure all sides are coated evenly. Grill the skewers for approximately 10 to 12 minutes, turning them every 3 to 4 minutes to achieve even cooking. Keep an eye on the vegetables to prevent burning. Once the vegetables are tender and slightly charred, remove them from the grill and serve immediately. Alternatively, you can cover the skewers with foil and keep them warm on the cooler side of the grill while finishing other dishes. Submitted by: Belle |
