1 3/4 c. unbleached flour
1/4 c. whole wheat flour
1/2 tsp. salt
1/3 c. shortening
3/4 c. milk
1 tbsp. baking powder

Preheat oven to 475 degrees. Stir together flours, salt and baking powder; cut in shortening until mixture resembles coarse cornmeal. Add milk and blend lightly with fork until flour is moistened and dough pulls away from sides of bowl. Turn out on lightly floured surface; knead lightly, 30 seconds. Roll 3/4 inch thick, cut round biscuits and place in round greased pan. Bake until golden brown, approximately 10 minutes.
