NAN'S BUTTERMILK BISCUITS 
2 1/2 c. all-purpose flour (white or whole wheat)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/3 c. shortening
1 c. thick buttermilk

Preheat oven to 450 degrees. Sift flour 3 times with other dry ingredients in 3 quart mixing bowl. Cut butter into dry ingredients with pastry blender until tiny particles. Pour milk into center well of flour mixture. Stir quickly with fork - dough should be soft. Add tablespoon of milk, if needed. Turn dough onto board. Knead quickly 6 to 8 times. Roll out 1/2 to 3/4 inch thick. Cut; grease both sides and bottom of pan. Set apart (not touching). For crusty all around biscuits, bake 10 to 15 minutes. Serve hot.
