SPANISH RICE 
1/2 c. uncooked rice
5 c. boiling water
3 slices finely diced bacon
2 tsp. chopped onion
2 tsp. chopped green sweet pepper
1 c. tomato juice
1 tsp. salt
1/8 tsp. pepper

Cook rice, uncovered in water until tender, drain and blanche with boiling water. Cook bacon until crisp; remove. Cook onion and pepper in bacon fat until brown and tender. Add rice, tomato juice, salt, pepper and bacon. Simmer 10 minutes or until juice is absorbed stirring occasionally to prevent sticking.
