BREAKFAST CASSEROLE 
1 lb. browned & drained breakfast sausage
3 eggs
1 1/3 cups milk
3/4 cup Bisquick baking mix
1 cup shredded Cheddar cheese
salt and pepper, to taste
1/2 cup chopped onions (optional)

Preheat oven to 400°F. Grease a casserole dish.

Mix eggs, Bisquick, milk, salt and pepper. Beat 1 minute. Pour into dish and add cheese. Stir in sausage and onions. Bake uncovered at 400°F for 25 to 30 minutes or until center tests clean. Cool 5 minutes.

Serves 3 to 5.

Why would you put the mixture in the casserole dish and then add the ingredients? I say mix the onions, meat, and whatever veggies you want into the egg, milk, and Bisquick mixture BEFORE you pour it in the dish. Also, you can top it with your favorite cheese before you put it in the oven for an even cheesier bite.

I just put all meats cheeses and veggies I want into the greased pan then blend the rest for a minute in my blender and pour over all and bake then add an added small sprinkle of cheese when I pull it out the oven and it melts it as it sits for the required 10 minutes to settle. Experiment with your ingredients using up leftover meats and veggies are great for the lunch or dinner pie, just add the fruit or salad of your choice.

This was AWESOME!!!!!! Wondering if any of you have made a double helping in a larger pan? This was gone in less than a second with my 15 yr old son and my husband lol. I got a small piece and would like to have more!
