COUNTRY CHEESE GRITS BREAKFAST
CASSEROLE
 
1 cup grits (not instant)
4 cups water
1 tsp. salt
1 1/2 cups grated sharp cheese
1/2 cup (1 stick) butter
2 eggs
chopped onion, sautéed (optional)

Preheat oven to 350°F. Grease an 8x8x2-inch baking dish.

Prepare grits according to package directions (using water and salt). Stir cheese and butter into hot grits.

Beat eggs, gradually add 1 cup of the hot grits, then return to the rest of the mixture. Pour into the greased baking dish.

Bake at 350°F for 30 minutes.
