BREAKFAST CASSEROLE 
3 c. shredded potatoes (or frozen hash browns)
1 lb. sausage
1 med. onion, chopped
1 c. grated cheese
8 eggs
2 c. milk
1 tsp. dry mustard
1/2 tsp. salt
Dash pepper

Brown sausage with onion, then drain. Butter 9"x13" casserole pan. Layer in potatoes (sprinkle with a little extra salt), sausage, and cheese. (Cheese will rise to top while baking.) Mix all other ingredients and pour on top. Bake in 350 degree oven for 40 to 45 minutes or until lightly brown.

I took the basics for this recipe, but made a few changes that turned out awesome!!! I used left over ranch roasted potatoes, I also used Bacon instead of the sausage, since I was out. I also used whipping cream instead of the milk. I used longhorn/colby cheese.This was the BOMB!!!
