SUNDAY BREAKFAST CASSEROLE 
1/4 c. chopped onion (optional), browned
1/4 c. chopped green pepper (optional), browned
2 c. cubed ham, bacon or sausage
1 c. grated cheese
1 doz. eggs
1 c. milk
1 (2 lb.) pkg. frozen hash browns, thawed (the chunk kind not grated)
1/2 tsp. salt
1/2 tsp. pepper

Mix onion, green pepper, meat and cheese. Mix together eggs and milk. Add hash browns, salt and pepper. Mix all ingredients together. Pour into a buttered 9 x 13 inch pan. Top with 1/4 cup more grated cheese (and sprinkle top with parsley flakes if desired). Bake 30 minutes until set at 350 degrees. Serves 12.

This would combine the bacon, eggs and hash browns and will serve 12 people. This would save us cooking the bacon separately and add the extra substance of the potatoes. Easy to throw salsa on this as well.

Excellent results. I modified slightly by using the hash browns frozen and baking for 1 hr, and I used a ham steak diced and a 2 cup bag of cheese. During baking, I covered loosely with foil after the cheese started browning to prevent burning.

Prepared this for a New Year's Day Buffet- turned out great and was really enjoyed by the men. I used potatoes O'brian instead of the hash browns and skipped the onions and peppers. I added the surface cheese 15 minutes before the end of cooking to avoid overbrowning. It actually took 40 minutes to set the eggs- leftovers were good cold and sliced.

Very good, but took 50/55 minutes for it to be set. At 30 minutes it was still very raw. I cubed up ham steak, as I said this was very good, also easy to put together.

I mix everything together Saturday night, and put it in the fridge. Sunday morning just turn on the oven, slide the casserole in and go back to bed! It is a nice way to steal a few extra winks! If there are leftovers, I slice and use to make breakfast burritos the next day. Dehydrated shredded potatoes work well with this recipe.

I add sour cream or leftover french onion dip. it makes it a little richer. I also use shredded hashbrowns.

I just got done making this! I did the exact same thing with bacon and sausage and added my own personal seasonings! Came out great. Also cooked for 50-55 minutes and not 30.
