CHICKEN MOZZARELLA 
1 lb. boned chicken breast, cut into strips
1 tbsp. oil
2 sm. zucchini, sliced in thin rounds
1 sm. jar of spaghetti sauce
8 oz. shredded Mozzarella cheese

In large fry pan heat oil and stir fry chicken until done over medium high heat. Remove from pan and set aside. Add zucchini to pan and stir fry until tender. Add cooked chicken and pour spaghetti sauce over. Heat through, put Mozzarella cheese on top and cover pan until cheese melts. Serve right from pan.
