KHACHIPURI 
2 c. flour
1 med. egg
1 sm. tub of plain yogurt
1 tbsp. cornstarch
3/4 tsp. baking soda
4 oz. crumbled feta cheese
1/2 lb. ricotta cheese

Mix together 1 cup flour, egg, yogurt, cornstarch and soda. Slowly add remaining cup of flour to make a soft, slightly sticky dough. Split into 2 balls, cover and set aside for about 1 hour.

Mix feta and ricotta thoroughly. Preheat oven to 350 degrees. Spread small handful of flour on surface of baking sheet. DO NOT GREASE BAKING SHEET!

Using a floured dinner plate, spread each ball of dough into a roughly dinner-plate sized circle, being very careful to not rip the dough. Place half the cheese mixture in center of dough. Bring edges together above the cheese and seal. GENTLY flatten to about 1/2 inch thick. If there are air bubbles, use a toothpick to let the air out. Place on the baking sheet and bake for approximately 15 minutes, the last 5 minutes should be under the broiler for a golden brown top. Let cool for about 5 minutes, cut with a serrated knife into wedges and serve hot.
