IDA MOIN'S MIDDLE EAST RICE 
1 c. long grain rice
Chopped dill
2 c. frozen peas
3 tbsp. oil

Wash rice. Soak 1 hour in salt water. Cook the usual way, but undercook slightly - just until not crunchy.

In a large skillet, put oil, a layer of rice, a layer of peas, a layer of dill. Cook on high 1 minute. Put a paper towel over skillet and cook on very low heat for 30-45 minutes.

Nice accompaniment to stir-fry or baked chicken.
