STEPHANIE'S EASY BAKED MAC 'N
CHEESE (FROM SCRATCH!)
 
Goes great with barbecue chicken!

1 (16 oz.) box elbow macaroni pasta
1 (8 oz.) pkg. cream cheese
1 (12 oz.) pkg. shredded cheddar cheese
1 egg
1/2 tbsp. corn starch

Boil macaroni as directed on package -- add a lot of salt to boiling water -- about 1 tablespoon.

In pan, melt cream cheese, stir in cheddar cheese until all melted. Spoon into bowl and add egg and corn starch - mix.

Drain macaroni and put in 9x13-inch casserole dish.

Spoon cheese mixture over and blend evenly with macaroni.

Note: Cheese mixture will seem thick.. The thicker the better! Should not be watery or it won't stick to mac!

Optional: Top with buttery bread crumbs and/or more shredded cheese, if desired, before placing in oven.

Bake at 400°F for about 30 minutes or till cheese is browned slightly.

The cheese mixture wasn't very creamy once baked. Seemed to need some heavy cream or milk added to it. I will be trying this recipe again with a few changes/additions.
