POTATO AND ONION SOUP 
2 yellow onions, chopped
3 potatoes, peeled and sliced
4 tbsp. (1/2 stick) butter
water (enough to cover)
1 (12 oz.) can evaporated milk (Carnation)
salt and pepper, to taste (white pepper looks better)
diced ham (optional)
fresh sliced mushrooms (optional)
parsley, for garnish

Combine onions, potatoes, and butter in pot. Add water to cover. Bring to a boil and let simmer for 30 to 40 minutes until potatoes are soft.

Mash potatoes in water, lumpy is okay. Add evaporated milk and mix. Add mushrooms and/or ham at this time and heat over low heat. Do not bring to boil.

Season with salt and pepper, to taste. Garnish each serving with parsley.
