CHINESE CHICKEN SALAD 
2 whole chicken breasts
Soy sauce
1 head iceberg lettuce, shredded
2 or 3 scallions, chopped
Cucumber, sliced
Carrots, sliced
Celery, sliced
1/3 c. soy sauce
1/3 c. sesame oil
1/3 c. rice vinegar

Prebake chicken breasts after rubbing with soy sauce. Cool and shred. Combine lettuce, veggies, and chicken. Mix soy sauce, sesame oil, and rice vinegar. Pour over lettuce mixture; mix thoroughly. Top with chow mein noodles.
