CHICKEN AND RICE SALAD 
3 c. chicken
1 c. cooked rice
1 (10 oz.) pkg. frozen peas
2 lg. tomatoes, seeded and chopped
1 c. sliced cucumbers
1 sm. green pepper
2 c. torn lettuce

Put 1/2 chicken in bottom of salad bowl, add lettuce. Mix rice and peas and add this mixture next. Then add tomatoes, cucumbers and green pepper. Add 1 1/2 cups of chicken on top.

DRESSING:

1 c. mayonnaise
1/2 c. sour cream
1/2 c. chopped onion
1/2 tsp. dry mustard
1/4 c. pickle relish
2 tbsp. milk
1/2 tsp. celery seed

Mix above ingredients and spread on top of salad; refrigerate. When ready to serve, toss salad and dressing well. This recipe was given to me by Patty Hollifield. Very good served with crackers.
