NEW ENGLAND MASHED POTATOES 
20 potatoes, peeled
8 tbsp. butter
2 tbsp. maple syrup
1/4 tsp. thyme
1/8 tsp. sage
1/4 tsp. summer savory
3/4 c. grated Parmesan cheese
2 eggs
1 1/2 to 2 c. milk

Boil potatoes. Mash. Blend in butter, maple syrup, spices, cheese, eggs and enough milk for desired texture. Keep warm in heavy casserole until served.
