MEXICAN CHEF SALAD 
1 lb. ground beef
1 can kidney beans, drained
1 head lettuce
1 c. grated cheese
2 med. tomatoes
1 bag Dorito chips
Thousand Island salad dressing

Brown ground beef (drain grease). Add drained can of kidney beans. In a large bowl, tear up lettuce, chop tomatoes and add cheese; mix.

Put salad mixture on your plate, crunch up Dorito chips on top, add warm ground beef and bean mixture to top of chips. Top with Thousand Island dressing. Serve with a fresh fruit salad. My children love this!
