CHICKEN CASHEW 
1 lb. boneless chicken breasts
1/2 c. white wine
3 tbsp. soy sauce
1 tbsp. cornstarch
1/2 tsp. instant minced garlic
1/4 tsp. ground ginger
1 med. green bell pepper, cut into chunks
1/2 c. cashew halves

Cut chicken into bite-sized pieces and place in a 2-quart round casserole. Combine wine, soy sauce, cornstarch, garlic and ginger in a 1-cup glass measure. Pour over chicken. Cover with wax paper and microwave on high 4 minutes, stirring midway through cooking. Add bell pepper, recover and microwave on high 3 to 4 minutes, stirring midway through cooking. Sprinkle with cashews and let stand for 3 minutes.

Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
