CASHEW CHICKEN | |
3 half chicken breasts, boned 1/2 onion, cut in one inch pieces A few snow peas 1/2 c. low salt cashews 3 tsp. soy sauce 2 tsp. white wine 2 tsp. cornstarch 2 tsp. soy sauce 1 tsp. sugar 2 tsp. water 1 tsp. hoisin sauce, if desired 1/2 c. cooking oil Remove chicken skin, and cut the chicken into one inch cubes. Marinate the chicken in 3 teaspoons soy sauce (best when marinated one hour before cooking). Add the cornstarch just before cooking. Heat wok and add oil. When oil is hot, add chicken. Stir fry until cooked. Remove from wok. Drain oil, leaving only 2 teaspoons oil in wok. Add onion and snow peas. Stir fry until cooked. Add chicken and 2 teaspoons soy sauce. Mix well. Transfer to a serving plate. Add the low salt cashew nuts on top. Serve. |
