BANANA TEA MUFFINS 
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
1/2 tsp. nutmeg
1/3 c. sugar plus 2 tbsp.
1/4 c. egg beaters
1/3 c. oil
5 tbsp. skim milk or butter milk
1 c. mashed, fully ripe bananas (2 to 3)

Sift together flour, baking powder, soda, salt, nutmeg and sugar into a mixing bowl. Combine egg beaters, oil, milk and bananas.

Add dry ingredients to egg oil mixture, mixing only enough to dampen all flour. Put into well greased small muffin pans.

Bake in a preheated 400 degree oven about 20 minutes, or until muffins are done. Serve hot or cold.
