SWEET - N - SOUR SKILLET PORK
CHOPS
 
1/4 c. apricot preserves
1 tbsp. soy sauce
1/2 tsp. ground ginger (fresh is better)
1 tsp. Oriental sesame oil
4 pork rib chops, 3/4" thick, trimmed
Or 4 split boneless breast of chicken

1. In a cup or bowl, mix first 3 until well combined.

2. Heat oil in large skillet over medium heat. Add pork chops (or chicken). Cook for 6 minutes.

3. Spoon apricot mixture over chops on chicken. Cook for 30 seconds or until just heated through. Turn to coat on all sides. Place on plates. Spoon glaze on each.
