HAM AND CHEESE STUFFED POTATOES | |
4 lg. baking potatoes 1 tsp. shortening 6 tbsp. butter 2 tbsp. grated onion 1/4 tsp. pepper 2 eggs 6 oz. shredded cheddar cheese 6 oz. diced ham Heat oven to 375 degrees. Scrub and dry potatoes. Rub with shortening (I use butter if I have no other shortening). Bake for 1 hour or until done. Cut potatoes in half. Scoop out inside, save potato shells on baking pan. In large bowl, beat potatoes 1 minute. Add butter, onion, pepper and eggs; continue to beat. Fold in 1 cup cheese (reserve remaining cheese for topping) and ham. Fill potato shells with mixture. Top with remaining cheese. Sprinkle with paprika. Bake at 375 degrees for 15 minutes. Great with a salad for dinner. |
