POTATO CRUST HAM AND CHEESE 
2 c. mashed potatoes, using skimmed milk
2 tbsp. prepared mustard
1 lb. cooked ham, cubed
1/2 c. lowfat cottage cheese
2 slices lowfat Cheddar cheese, crumbled

METHOD: Mix mashed potatoes and mustard. Spread evenly in bottom of non-stick 8 inch square baking pan. Add ham cubes in layer on top of potatoes. In electric blender, blend cottage cheese and Cheddar cheese until fairly smooth. Spread over ham. Bake at 350 degrees for 30 minutes or until casserole is heated through. Makes 5 servings, about 250 calories each.
